Roast Beef & Yorkshire Pudding

A typical main course doesn’t always mean turkey. Try this Roast Beef and Yorkshire Pudding recipe.
Yorkshire Pudding Ingredients:
- 1 cup sifted flour
- 1/2 teaspoon salt
- 2 eggs
- 1 cup milk
Rub 1 teaspoon salt into the fat of the meat and cook your roast beef – use prime rib – according to directions and the way you like it cooked, starting with 25 minutes at 450 degree Fahrenheit. Let it stand for twenty minutes on a platter before slicing. Set aside ½ cup of meat fat.
Allow the meat to rest as you make the pudding by lowering the heat to 400 degrees and setting an 11×8 pan in the oven to get hot. Sift the flour and salt together and set aside. Beat the eggs and milk together until frothy and then slowly add the dry ingredients into the liquid until smooth.
Pour the reserved fat into the hot pan coating the bottom and then add the pudding batter. Bake for 20 minutes then reduce the heat to 250 degrees and bake for 10 to 15 minutes longer. Pour over meat and serve.
